Radishes belong to the cruciferous vegetable family (the same as broccoli and cabbage) and contain phytonutrients, fiber, vitamins, and minerals that help protect against cancer.

INGREDIENTS

8 six-inch flour tortillas

½ cup radishes, thinly sliced

½ cup Monterey jack cheese

½ cup queso fresco cheese

6 T cilantro, finely chopped

3 ½ T lime juice

2 green onions, chopped

2 T jalapeños, seeded and minced

1–2 T canola or other oil for sautéing

Salt and pepper to taste

 

PROCEDURE

Toss together radishes, cilantro, lime juice, green onions, and jalapeños. Season with salt and pepper.

Preheat the grill or, if using a sauté pan, set temperature to medium-high and add oil. Divide the radish mixture and cheeses evenly among four tortillas and top with the second tortilla to sandwich.

Grill or sauté the quesadillas until the cheese is melted and the tortillas are golden brown on both sides. Serve warm.
