We know what you thinking, beets are gross. We are here to change that. Try out this delicious alternative popsicle and cool off during the summer!

Beet Popsicle

Strawberry Layer

Ingredients:

  • 3 cups ripe strawberries, frozen
  • 1/4 cup Love Beets Organic Beet Juice
  • 1/4 cup full-fat canned coconut milk
  • 2 Tbsp pure maple syrup

Lime Layer

Ingredients:

  • 1 cup full-fat canned coconut milk
  • 3 Tbsp lime juice
  • 1/4 cup pure maple syrup

Blueberry Layer

Ingredients:

  • 2 cups fresh or frozen blueberries
  • 1 Tbsp lemon or lime juice
  • 1/2 cup full-fat canned coconut milk
  • 2 Tbsp pure maple syrup
Instructions:

  1. Add the “strawberry layer” ingredients to a high-powered blender. Blend until completely smooth (the mixture will be thick). Pour the mixture into 10 3-oz popsicle molds, filling each mold about 1/3 of the way up. Cover and place in freezer for 30 minutes. Wash out the blender and prepare the next layer.
  2. Prepare the “lime layer” by adding all ingredients to the blender and blending just until combined. Pour a small amount of this mixture into each popsicle mold to create the white layer. Cover and place in the freezer for 30 minutes. Wash out the blender and prepare final layer.
  3. Add the “blueberry layer” to the blender and blend until smooth. Fill the popsicle molds with the mixture and place the cover over the molds. Insert popsicle sticks into the mold and freeze until completely frozen – about 3 to 4 hours.
  4. When ready to enjoy, thaw popsicles for 5 to 10 minutes before removing the cover from the popsicle mold and pulling popsicles out. To speed up the process, run hot water over the outside of the popsicle molds for 10 to 15 seconds.
