Don’t be fooled by the gnarly appearance of these oddly shaped tomatoes. With 40 percent of your daily vitamin C requirement, heirloom tomatoes pack quite the immune-boosting punch. And as a rich source of lycopene, they also serve up a tasty way to ward off cancer.

Heirloom Tomato Salad

Ingredients:

  • 2 lb. cherry heirloom tomatoes
  • Fresh tarragon, chopped
  • Fresh corn kernels, raw or blanched
  • Champagne vinegar
  • Extra-virgin olive oil
Instructions:
Cut heirloom tomatoes into wedges. Toss with sprinklings of fresh tarragon, crumbled goat cheese, and fresh corn kernels to suit your taste. Drizzle with champagne vinegar and extra-virgin olive oil and toss to combine. This recipe was adapted from Williams Sonoma.
