Cherry Heirlooms and Marinade

Ingredients:

  • ¼ lb. cherry heirloom tomatoes
  • 1 cup balsamic vinegar
  • 1 cup fresh thyme
  • 1 cup fresh oregano
  • ¼ cup diced shallots
  • ¼ cup sherry vinegar
  • 1 cup extra-virgin olive oil
  • 1 T. Kosher salt
  • 1 tsp. black pepper

Instructions:
Start this recipe the night before serving. Halve the cherry heirlooms and set aside. Mix all ingredients for the marinade, then pour over heirlooms and let sit overnight.

Artichoke Cream Cheese

Ingredients:

  • 1 lb. cream cheese, room temperature
  • ¼ lb. artichoke hearts
  • ¼ cup mayo
  • ¼ cup sour cream
  • 2 T. fresh garlic
  • 2 T. fresh oregano
  • Salt and pepper to taste

Instructions:
For the artichoke cream cheese, let the cream cheese get to room temperature, then mix with remaining ingredients until fully incorporated. Season with salt and pepper to taste.

Balsamic Gastrique (Glaze)

Ingredients:

  • 3 cups balsamic vinegar
  • 1 cup honey

Instructions:
Make your balsamic glaze by bringing the balsamic and honey to a boil, then to a simmer. Reduce until it reaches a syrup consistency.

  • Cherry Heirlooms and Marinade
  • Artichoke Cream Cheese
  • Balsamic Gastrique (Glaze)

Instructions:
Construct your bruschetta by grilling bread slices, then spreading a generous spoonful of artichoke cream cheese on each one. Top bruschetta with marinated cherry heirlooms and balsamic glaze.
